What's Cooking in Levi County

Texas Hash
2 lbs. ground beef
1/2c. bell pepper & onion chopped
1 tsp. chili powder
1 c. uncooked rice
1 qt. (2 cans) tomatoes
Brown beef, add onions & pepper, tomatoes, & chili powder. Add this mixture with 1 c. uncooked rice. Bake in covered casserole @ 350 degree oven for 1 hr.

What's Cooking in Levi County
1-1/2 c. margarine
3 c. sugar
4 eggs
3 c. flour
1 tbsp. lemon extract
3/4 c. 7UP
Cream sugar & butter together & beat until light & fluffy. Add eggs one at a time & beat well. Add flour. Beat in lemon extract & 7UP. Pour batter in well greased & floured bundt pan. Bake at 325deg. for 1-1/2 hrs.
Icing
1-1/2 c. white sugar
4 tbsp. corn starch (stir in sugar)
1 stick margarine
1 c. cold water

Cook over medium heat stirring constantly.
Stir in 1 small can crushed pineapple.
Beat until smooth.
Spread on cake when cake is cool.
Delicious.

What's Cooking in Levi County

What's Cooking in Levi County is a cookbook compiled by the Community Involvement Team of Levi Strauss & Co. from 11 counties were their factories once flourished. The recipes are a real taste of American home cooking, for better or worse.
Every Sunday we will be sharing a recipe from this darling cookbook.
Shipwreck Casserole
From: Golda Mae Potter Maryville, Tenn.
Place in baking dish 1 lb. ground chuck, salt & pepper.
Over the meat sprinkle a layer of chopped onion, 3 layers sliced potatoes, salt,
1/2 cup grated cheese, 1 small can pork & beans,
1/2 can (or a little more) condensed tomato soup.
Cover tightly with foil and bake for 1-1/2 hrs at 350.
